The Home Economics Careers and Technology/Health fields
have always been broader than the public perceives them to be. Today’s
Home Economics/Health technology education has broadened its scope
to provide essential instruction that prepares students with critical
skills that have application for both living and earning a living.
Home Economics/Health courses offer “real life” lessons to help
students in meeting the challenges they will face in the future.
In addition, the curriculum contributes to the academic success
of students by reinforcing the academic core and emphasizing the
development of critical thinking skills. Students can expect to
produce and participate in hands on projects that would lead them
toward careers such as pre-school director, fashion designer, cake
decorator, food scientist, dietician, chef, wedding planner, interior
designer, and paraprofessional health technician.
9th – 12th Grade Courses
Culinary Arts 1
Semester (5 credits)
This beginning class will introduce students to basic cooking and
personal management skills including how to prepare food, use kitchen
equipment and current technology, organize and maintain a safe and
sanitary kitchen, select and purchase food, and manage a budget.
Students will also study careers related to foods and nutrition,
the relationship between fitness and health, and develop and demonstrate
leadership skills. This course is a recommended elective for students
in Home Economics Related Occupations (H.E.R.O.). A nominal lab
fee will be assessed at the beginning of the semester. A shop card
is available for students needing financial assistance.
Culinary Arts 2
Semester (5 credits)
Prerequisite: Open to twelfth grade students and students who have
successfully completed Biochemistry of Food or Culinary Arts 1 or
by teacher permission. This course will allow students to increase
their culinary skills by learning how to make yeast breads, sauces
and stocks, pastas, pies and a variety of international foods. Students
will become familiar with the Professional Food Safety Program:
SERVSAFE and may be given the opportunity to become SERVSAFE certified
through a national testing program. Students may continue to gain
valuable food service training through student run restaurant activities
on campus. Field trips and guest speakers from culinary schools
may provide information to students about continuing their culinary
training beyond high school. A nominal lab fee will be assessed
and a shop card is provided for students needing financial assistance.
Clothing Lab 1
Semester (5 credits)
This course will introduce students to basic hand stitching and
basic sewing machine usage. Students will study fashion, color selections,
design and basic garment construction skills. One needlecraft stitchery
project and one garment project; as well as a portfolio of sewing
samples are required to pass this course. Students are required
to pay a nominal lab fee for materials; a shop card will be available
for those needing finical aid. No perquisite is needed; one semester
credit is given for successfully passing this course.
Clothing Lab 2
Semester (5 credits)
Prerequisite: Clothing Lab 1.
This course will allow students to become more aware of the history
of fashion and the influence of color and design on fashion trends.
The emphasis of this class will be on clothing construction, fitting
and workmanship. One needlecraft stitchery project and one garment
with a set in sleeve; as well as a portfolio of sewing samples are
required to pass this course. Students are required to pay a nominal
lab fee for materials; a shop card will be available for those needing
finical aid. Clothing lab 1 is a perquisite or the permission of
the instructor is needed; one semester credit is given for successfully
passing this course.
Child Development and Parenting
Semester (5 credits)
As per state standards, the student will learn the development process
of children from conception to preschool- age, family life, proper
health care of infants and children, pre and post-natal care, safe
appropriate toys, furnishings, and clothing. The student will identify
issues dealing with child abuse, neglect, and discipline. Development
stages of language and motor skills, as well as family relations,
siblings, and extended family will be studied. A nominal lab fee
for materials may be required. A shop card is provided for those
who need financial assistance. This course is a prerequisite for
ROP Careers in Education and Child Development.
Health
Semester (5 credits)
This semester class fulfills the WJUSD and the State of California’s
graduation requirements in the area of health education. This course
is aligned with the goals of the California Health Framework guideline.
This course will prepare students to use critical thinking and be
objective and responsible in the areas of family life, nutrition,
personal health, communicable and chronic diseases and individual
mental and physical health. Parents are notified prior with a permission
slip to be signed, of the unit on Human Sexuality to ensure that
the material covered is appropriate for their student. Students
are educated to use the tools and information given to them to meet
the “real life “ lessons and challenges they will face in the future.
Interior Design
Semester (5 credits)
As per state standards, the student will explore housing needs,
architectural and furniture styles, elements and principles of design,
and furniture arrangement. Window treatments, lighting, furniture
selection, room arrangement, kitchens, service areas and storage
will also be studied. An in depth study of career opportunities
in the filed of Interior Design and a personal portfolio will be
kept. A nominal lab fee may be required. A shop card is provided
for those who need financial assistance.
10th – 12th Grade Courses
Clothing Lab 3
Semester (5 credits)
Prerequisite: Clothing Lab 2
This sewing course will introduce students to advanced clothing
construction such as plaids, pockets and zippers. Students will
study fabric finishes, dyeing processes, tapestry, and batik. One
needlecraft stitchery project and one garment from a knit fabric;
as well as a portfolio of sewing samples are required to pass this
course. Students are required to pay a nominal lab fee for materials;
a shop card will be available for those needing finical aid. Clothing
lab 1 and, 2 is a prerequisite or the permission of the instructor
is needed to take this course; one semester credit is given for
successfully passing this course.
Clothing Lab 4
Semester (5 credits)
Prerequisite: Clothing Lab 3
This sewing course will introduce students to fabric content and
recognition of fabrics both natural and synthetic. Students will
understand pattern adjustment for individual needs. A synthetic
fabric garment as well as a natural fabric garment is required.
One needlecraft stitchery project; as well as a portfolio of sewing
samples is required to pass this course. Students are required to
pay a nominal lab fee for materials; a shop card will be available
for those needing finical aid. Clothing lab 1, 2 and 3 is a prerequisite
or the permission of the instructor is needed to take this course;
one semester credit is given for successfully passing this course.
Clothing Lab 5
Semester (5 credits)
Prerequisite: Clothing Lab 4
Students will learn advanced skills such as seam finishes, hand
button holes, embroidery, patch pocket, bias tape construction,
piping, cording and appliqué. Students will complete 2 garments
of their choice with teacher’s approval. One needlecraft stitchery
project; as well as a portfolio of sewing samples is required to
pass this course. Students are required to pay a nominal lab fee
for materials; a shop card will be available for those needing finical
aid. Clothing lab 1, 2 ,3 and 4 are a prerequisite or the permission
of the instructor is needed to take this course; one semester credit
is given for successfully passing this course.
Clothing Lab 6
Semester (5 credits)
Prerequisite: Clothing Lab 5
Students will learn advanced skills such as spot and stain removal,
mending techniques, collars, interfacings, layout markings. Students
will complete 2 garments of their choice with teacher’s approval.
One needlecraft stitchery project; as well as a portfolio of sewing
samples is required to pass this course. Students are required to
pay a nominal lab fee for materials; a shop card will be available
for those needing finical aid. Clothing lab 1, 2 ,3 ,4 and 5 are
a prerequisite or the permission of the instructor is needed to
take this course; one semester credit is given for successfully
passing this course.
11th – 12th Grade Courses
Consumer Economics
Semester (5 credits)
This course will introduce the principles of economic theory as
they relate to the consumer. Students will learn how to make the
most of their personal resources and how their decisions relate
to the national economy. The major essentials of economic theory
are studied in the context of the individual consumer. Units of
study may include personal budgeting, renting and owning a home,
purchasing a car, auto, life and health insurance, checking and
savings accounts, investing, and managing credit.
Careers With Children (ROP)
Year (10 credits)
Prerequisite: Completion of Child Development/Parenting with a grade
of “C” or better or instructor’s approval. Note: Tenth grade acceptance
with teacher approval. Students will learn developmentally appropriate
practices in order to prepare for a career in child care or early
childhood programs. Students will learn the physical, intellectual,
social and emotional characteristics of young children in order
to plan for and be successful when working with children. An Internship
placement is designed for students to gain valuable hands on experience
and the opportunity to apply what is learned during classroom instruction.
Students will complete a Career Development Portfolio, lesson planning,
classroom design, bulletin board and child development projects.
A certificate of completion as well as a 2t2 tech prep community
college credits of 6 ECE upon completion of a year long class with
a grade of A or B is required.
Certified Nursing Assistant (CNA) (ROP) SO310Y PHS WHS The intent
of the certified nursing assistant (CNA) course is to promote quality
patient care, to provide entry-level skills for employment as a
nursing assistant and to provide awareness of opportunities and
choices in health care occupations. The CNA program provides training
in the areas of theory and clinical practice. Upon successful completion
of this 2 hour course the student meets the requirement to be tested
for certification by the Department of Health Services of California.
Health Careers (ROP)
Year (10 credits)
Prerequisite: Selection by application/interview. Note: Tenth grade
acceptance with teacher approval.
Students will learn appropriate practices in order to prepare for
a career in the health field. An internship placement is designed
for students to gain valuable hands on experiences in a wide variety
of career opportunities. The health care field includes: physical
therapy, nursing, dental offices, business offices, occupational
therapy, EMT, environmental services, food service, medical assistants
and radiology. The goal is to foster student’s interest by providing
the opportunity to apply what is learned during the classroom instruction.
This Course includes a two period class certification of completion
as well as a 2t2 tech prep community college credit upon completion
of year long course with a grade of A or B
